厨房里的快乐 105 - 栗子蛋糕
这款以戚风做糕体,栗子奶油的蛋糕是以爱·厨的copy版。
在材料上有所改:
栗子蛋糕(戚风)
材料: (9吋)
蛋糕体:蛋6个,熟栗子一袋,砂糖40g,色拉油60 ml,果汁1大匙,牛奶3大匙,中筋面粉80g,白醋1小匙。
栗子夹馅:熟栗子一袋,鲜奶油3大匙,砂糖40g。
栗子鲜奶油:熟栗子一带,鲜奶油一pt,糖粉3大匙,果汁1大匙。
装饰材料:熟栗子几颗。

1. 将栗子用食物调理机打成细粉状备用。
2.分开蛋黄与蛋白. 蛋黄分数次加入砂糖40g搅打至发泡、颜色变浅黄且体积膨胀,倒入栗子泥、色拉油、牛奶、果汁搅拌均匀。倒入面粉,用橡皮刀拌匀至无粉粒。
3. 烤箱预热至325F。
4.蛋白加入白醋,用搅拌器打至起泡,然后分三次加入剩下的砂糖,持续打至中性发泡即可。
舀出大约1/3的蛋白泡放入蛋黄面糊中,搅拌均匀之后,把面糊全部倒回剩下的蛋白泡中,大范围且由下往上搅拌均匀(将盆底的面糊往上翻出),注入烤模中,用力震一下烤模使大气泡释出,入炉烘烤约30~35分钟。
5. 出炉之后用力震一下烤模,然后立刻连模翻转倒扣待凉。完全凉透时,翻回来脱模,并横切成二层蛋糕片,抹上栗子夹馅,外面用栗子鲜奶油霜饰即可。
小贴士:
1. 栗子鲜奶油:将栗子用食物调理机打成细粉状,搅拌棒与打蛋盆放入冰箱冷冻半小时备用。打蛋盆里倒入鲜奶油与栗子泥用搅拌器打散,然后加入糖粉继续搅打至成固态。
2. 栗子夹馅:将栗子用食物调理机打碎但仍保留少许块状,将奶油加热融化,倒入砂糖搅拌至溶解,倒入栗子泥搅拌均匀,完全冷却之后,倒入一杯已打发的栗子鲜奶油拌匀即可。
7. 先将 栗子夹馅夹入二层蛋糕片中。再装饰外层奶油层 (图2)。

厨房里的快乐 104 - cranberry cheese cake
Ingredients
- 3/4 cup graham cracker crumbs
- 1/2 cup finely chopped macadamia nuts
- 2 tablespoons Sugar
- 1/4 cup butter, melted
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 2 packages (8 ounces each) cream cheese, softened
- 14 ounces whole-berry cranberry sauce
- 1 cup heavy whipping cream
- SUGARED CRANBERRIES:
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 1 package (12 ounces) fresh cranberries or frozen cranberries, thawed
- 2/3 cup superfine sugar
Directions
- In a small bowl, combine the cracker crumbs, nuts and sugar. Stir in butter. Press onto the bottom of a greased 9-in. springform pan. Place on a baking sheet. Bake at 350° for 10 minutes or until lightly browned. Cool on a wire rack.
- In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved; cool slightly.
- In a large bowl, beat cream cheese Beat in cranberry sauce. Add cooled gelatin; mix well.
- In a small bowl, beat cream until stiff peaks form. Fold into cream cheese mixture. Pour over crust. Refrigerate for 8 hours or overnight.
- In a microwave-safe bowl, sprinkle gelatin over cold water; let stand for 1 minute. Microwave on high for 1-2 minutes, stirring every 20 seconds, until gelatin is completely dissolved. Whisk until slightly frothy.
- Lightly brush mixture over all sides of berries. Place on a wire rack over waxed paper; sprinkle with superfine sugar. Let stand at room temperature for up to 24 hours (do not refrigerate or the sugar will dissolve).
- Just before serving, carefully run a knife around edge of pan to loosen. Spoon sugared cranberries over cheesecake. Refrigerate leftovers. Yield: 12 servings.
Nutritional Facts1 slice equals 474 calories, 29 g fat (16 g saturated fat), 79 mg cholesterol, 229 mg sodium, 51 g carbohydrate, 2 g fiber, 5 g protein.

厨房里的快乐 103 - 酸奶做的 cheese cake
看到一篇文章说,女人喜欢 cheeses cake 就象喜欢女人高跟鞋:明知道穿着不舒服,不能走路,却还要拥有一双又一双! cheeses cake 就是我喜欢之一的一道点心! 而这款用 non-fat yogurt 代替cheeses 的cheeses cake可以放心地享受,因为口感和味道和原味cheeses cake 一模一样。
材料:
1. 皮:1&1/3杯面粉,1杯打碎的nuts,1条融化的butter拌匀,倒入一个7寸的可脱底烤盘,放烤箱325F/170C, 烤10分钟,放入冰箱冷藏至少半小时以上。
2. 馅:无糖酸奶500g(滤水过后,约200g),heavy cream 200ml, 鸡蛋 2个,糖 60g,巧克力 数滴,玉米芡粉一勺。
步骤:
1. 酸奶滤水可以用一张厨房纸或纱布垫在筛框里,酸奶倒进去,放置一个晚上
滤水过后是这种样子的,完全不会散开,处于半凝固状态(图1)。
2. 将鸡蛋+糖先均匀。
3. 再加所有的馅材料搅拌均匀。
4. 然后将3倒在凉却的皮上,放入烤箱第一层,在烤箱第二层再放一个加入热水的大一些的烤盘。在烤箱里300F/160C,烤45-50分钟,直到中间已经凝固。烤箱关火,但是不要把蛋糕拿出来,让它继续在烤箱呆1个小时左右,取出来放网架上冷却10多分钟.

厨房里的快乐 102 - Lasagna Cupcake
实在不知道中文应该如何翻译了。就是一款意大利面。
原料:
1. 1/3磅碎牛肉,洋葱半只和蘑菇3只切碎,油2 勺,盐和胡椒;
2. 12 张饺子皮;
3. 3/4杯磨碎的Parmesa(3盎司);
4. 3/4杯切碎的mozzarella(3盎司);
5. 3/4杯Ricotta cheese(3盎司);
6. 1杯意粉酱。
做法:
1. 烤箱预热至375度。喷油在muff 的锡盘上。
2.锅里放油后,加 碎牛肉,切碎的洋葱半只和蘑菇3只,盐和胡椒,再加Ricotta 和 mozzarella。加1杯意粉酱拌匀,除去多余的水。
3. 开始分层烤宽面条蛋糕。首先用饺子皮,然后按到每个muff 盘的底部。撒上一点点的Parmesa芝士。顶端有一点肉类和面食酱(图1)。
4.重复层(饺子,牛肉酱)。顶部保留Parmesa奶酪(图2)。
5. Bake 15分钟或直到边缘是金黄色的。从烤箱中取出,放凉5分钟。(图3)

12 dumping wrappers

Directions
1. Preheat oven to 375 degrees. Spray muffin tin with cooking spray.
2. Brown beef, and season with salt and pepper. Drain.
3.Reserve 3/4 cup Parmesan cheese and 3/4 cup mozzarella cheese for the top of your cupcakes. Start layering your lasagna cupcakes. Begin with a dumping wrapper and press it into the bottom of each muffin tin. Sprinkle a little Parmesan cheese, ricotta cheese, and mozzarella cheese in each. Top with a little meat and pasta sauce.
4. Repeat layers again (i.e. dumping wrap, Parmesan, ricotta, mozzarella, and pasta sauce). Top with reserved Parmesan and mozzarella cheeses.
5. Bake for 18-20 minutes or until edges are brown. Remove from oven and let cool for 5 minutes. To remove, use a knife to loosen the edges then pop each lasagna out.

原以为网上的那么多的食谱看看,可以再也不写了。没有想到今天在做这款花卷时,却怎么也想不起来了,再到网上查时,也一下子查不到。加上这个周末遇到多年不见的老同学,他们也一直在关注着。所以继续写下去。

名副其实的花卷:
用料:yeast 2 tsp,温水(45C左右)1 cup,普通面粉3杯 葱花,盐, 糖各少许;
做法:
1. 将水·用Microwave 加热。 放入yeast 和糖搅拌均匀,放置在有热的地方,直到看到有泡泡在水的表面浮起·。
2.用stand mixer揉 5-10分钟将1和面粉揉成光滑的面团团。(可能需要根据面团干稀程度调整水和面粉用量,必要的时候往里加面粉或者水。)
3.一次发酵室温1小时左右,到面团体积翻倍。
4.发酵好的面团用擀面棍排气,切成差不多大小的小剂子(撒上葱花,盐),压扁,擀平成圆形。将四~五片面片依次排好,卷起来,面卷中间用刀切开面团,整理侧面和底部的面团成玫瑰花。(见图1)
5.整理好的玫瑰花们,静置30分钟到1小时二次发酵。
6.大火蒸10分钟,关火1分钟,取出。(图2)

去年的十一月回家陪妈妈住院,开刀。今年的中秋,国庆节日陪爸爸妈妈去厦门旅游。四天的旅行过得很愉快。

厨房里的快乐 100 - Meatball 牛肉丸子
这是100 期来个全家福:
meatball 牛肉丸子, 上海小排骨 和 烤虾仁 是满足了家里每个人的爱好。
meatball 牛肉丸子:
1.1lb 的美国超市买的牛肉馅,拌入一勺生姜粉,一勺蒜粉和一勺盐。
2. 用大勺将肉馅拌成大的肉团子。
3. oven 预热到375F,将团子烤20分钟,
4.重新再拿一锅,放入切好的洋葱,再放入烤好的牛肉丸子,煮15分钟,再加入一些 meatball sauce 就可以了。

Beef Meatball Recipe:
1. Start with 1lb of ground beef, stir in a spoonful of ginger powder, a spoonful of garlic powder and a spoonful of salt.
2. Use a big spoon to make shape the meat into meatballs.
3. Preheat the oven to 375F, then let the meatballs cook for 20 minutes.
4 Use another pan to cook the meatballs. Add chopped onion, then add the grilled beef meatballs. cook for 15 minutes, then add meatball sauce on it.

1. 将薄荷冲洗干净;
2 用一大锅将水和薄荷一起煮半个小时;
3 等薄荷水凉透了,放入冰箱冻起来;
4 可以做成 smoothie,凉茶等。

厨房里的快乐 98 - 戚风蛋糕卷
戚风蛋糕卷
材料: (卷好长度为15吋)
蛋4个,糖 80g (蛋白和蛋黄各一半),牛奶50 ml,沙拉油 45ml,兰姆酒或水果酒15ml,低筋面粉80g,泡打粉 半小匙,白醋或柠檬汁1小匙。
夹馅:液态鲜奶油1杯,糖粉3大匙,切碎的草莓丁约半杯。
工具:
10x15吋长方浅烤盘(26x38.5 cm),烤盘纸2张,电动搅拌器,橡皮刀。

1. 烤盘上铺纸,在边缘四个角落各剪出一个缺口,整理烤盘纸使服贴在烤盘上。烤箱预热至180 C/ 350 F。
2. 蛋黄与蛋白分开,大碗里放入蛋黄与大约一半的糖,搅拌均匀,加入牛奶、兰姆酒与植物油搅拌至糖溶解。混合低筋面粉与泡打粉,筛入蛋液中,搅拌至无粉粒。
3. 在干净无油的打蛋盆中放入蛋白与白醋一起打发,中途加入剩下的糖,直到中性发泡(提起搅拌头可以拉出尖角且翻转也不会滴落)。
4. 用橡皮刀舀出1/3蛋白泡与蛋黄面糊拌匀,然后把拌好的面糊全部倒回剩下的蛋白泡中搅拌均匀,倒入烤盘中,把表面括平,用力震一下烤盘释放大气泡,然后放进烤箱烤约12分钟。
5. 鲜奶油加入糖粉一起打发至固态,拌入草莓丁备用。准备好一个冷却架,上面铺好一张烤盘纸(B),蛋糕出炉后,立刻倒扣在烤盘纸(B)上,静置25分钟待凉,冷却之后撕掉蛋糕底纸(A:原来铺烤盘用的那张),将蛋糕底纸(A)干净的那面朝上放好,将蛋糕片整个翻过来倒扣在底纸(A)上,然后再撕掉烤盘纸(B)丢弃不用。蛋糕表面抹上一层鲜奶油夹馅(最远的末端要保留约1吋长不涂鲜奶油,这样收口处才不会有鲜奶油溢出),以15吋长的那端开始卷起,这时可以用下方的烤盘纸(A)辅助收卷,还可以用杆面杖顶在后方帮助使收卷的角度平均,一边卷,一边收起烤纸,收尾处调整在正下方,以烤纸(A)包裹、移入冰箱冷藏静置半小时即可切片食用。

Instruction:
1. Lay the baking paper in the pan and cut off the excess paper. Preheat oven to 180 C / 350 F.2. Separate the egg yolk and whites, and put the egg yolk in a big bowl. Add about half of the sugar, stir, then add the milk, rum and vegetable oil and stir until the sugar dissolves. Mix the flour and baking powder in a separate bowl, then add into the egg mixture and stir until mixed.
3. In a clean oil-free pot pour the protein and vinegar together to around half the pot. Add the remaining sugar, until mixed well. (the mixing head can be pulled out if hitting the sides of pot and flipped; will not drip).
4. With a rubber spatula scoop out 1/3 of the egg white mixture and egg yolk batter and mix well, then the bubble of marinated batter all fell back to the rest of the protein Stir, pour into a baking dish, including the surface level, hard look at earthquake pan to release large air bubbles, and then into the oven and bake for about 12 minutes.

绿豆凉粉的制作过程:
绿豆淀粉跟清水以1:6的比例混合成均匀的淀粉水。将淀粉水倒入锅中,用中小火加热,并不断搅拌。等到锅中的淀粉水呈现半透明后再继续加热10秒,大量冒泡的时候,关火。倒入容器中,晾凉,也可以再放冰箱冷藏2个小时左右即成块状凉粉。可以切成条状。
绿豆凉粉的制作要领:
绿豆淀粉的胶冻性能最好,是制作凉粉的最好原粉;绿豆淀粉跟水的比例为1:6时,口感最好吃;煮面糊的时候一定要用中小火,控制好火候很重要,不停搅拌;绿豆粉糊化时,温度不宜过低,否则糊化不透;面糊呈现半透明状的时候,不要立马关火,要继续煮上10秒钟左右,直到面糊大量冒泡再关火。
调料:
crab meat,生抽,辣椒油、黄瓜丝、芝麻油、精盐、醋和蒜泥搅匀即成。

提到腊肉,一定会想到要腌要晒。这里介绍的是可以免去晒上几天的做法。
原料:
新鲜的猪腿肉 二磅,盐二— 三勺,酱油少许。
做法:
1. 猪肉用水冲洗干净,沥干。
2. 将盐撒上去,抹匀。放入冰箱一天。
3. 烤前将盐冲去。再用酱油抹上,腌20分钟。
4. 烤箱 250oC, 2-3 小时。肉里的油烤出来了, 肉也熟了,即可。

厨房里的快乐 95: 豆沙的烤箱做法
材料:
1.红豆 或 绿豆一袋(约35g),糖 1/2杯,素油1/2,butter 2tsp。
做法:
1. 红豆或绿豆放入高压锅,放入3倍清水,煮开后,小火20分钟。
2. 分兩~三次用果汁机打成泥状,然后放入 7X8'' 的玻璃容器。玻璃容器底和边上都用butter 抹一层。然后倒入烧好的豆沙和糖,素油拌匀。
3.放入预热 250oC 的oven 烤 1~2 小时,看到豆沙基本干即可。
4. 省去炒的过程,避免了油溅出了的情况。
5. 绿豆的话,可以买没有带皮的绿豆,这样煮起来会更快些。

这二天又是25oC 的温度,转眼夏天就到了。便想起每年天热时喝一款健康茶:
材料
干山楂 3~4片,普洱茶一粒,水2升,野菊花 5-6颗,熟决明子一勺。
做法
1、把买来的山楂片冲洗干净,决明子也用水冲洗过。用oven 250oC 烘干;
2、取以上的量和杭白菊、普洱、一起加沸水泡开后就可喝了;
3、可继续泡开水喝到淡.
喝到二 到三个月,一定会有减压,减脂,减重的效果的.

厨房里的快乐89 - 自制酸奶 (Yogurt DIY)
材料:
1。1%有机低脂牛奶一杯;
2。 1勺纯酸奶作为发酵的来源,保持源头酸奶对牛奶的比例是一大汤勺对一杯牛奶。使用源酸奶要其中含有酸奶菌(如Dannon 牌)。
3。容器要进行消毒后才能使用;洗碗机洗过也是可以使用的。
4。表盘温度计(可选)。
做法:
1.将一杯牛奶加热到185°F(85°C):
将牛奶放入消毒好的容器,然后使用微波加热2分钟,如果牛奶没有达到185oF,再叮当一分钟。
这样做是为了使牛奶的温度略于沸腾(约185F)。这可杀死牛奶中的任何不良细菌,并帮助它勾芡。
2.使牛奶冷却至110°F(43°C)。
将牛奶被煮熟后,它需要冷却下来到约〜43oC ~110°F。这时你的手可以触摸的温度,就可以了;发酵的温度应是不低于90℉( 32°C)和不高于110°F(43℃),这便是最佳的温度。
3.发酵过程:
将一汤匙的纯酸奶放入冷却好的牛奶中,充分地搅拌;这是一个非常重要的关键一步。可以使用搅拌机的均匀地把酸奶菌混和到牛奶中去。
4.开始发酵(保暖):
把拌均匀的酸奶容器放入“(keep warmer)~110oF烤箱抽屉里2-3小时即可得到香喷喷的酸奶了(图2);
4A.或用烤箱灯光过夜,第二天早晨,你也可以得到(图2)酸奶。
4B.或者你也可以尝试用慢煲,以保持温度在〜110oF。
5.使用这个酸奶作为下一批酸奶的源头。
Ingredients:
1. one cup of organic 1% lowfat milk;
2. 1 full Tbs of plain yogurt (as a starter), keep source yogurt to milk ratio is one full Tbs/one cup. Use Dannon plain yogurt as the starter culture, which has the bacteria (Lactobacillus bulgaricus and Streptococcus thermophilus live yogurt culture), that turns the milk into yogurt(after dishwasher will be ok to use),.

Instruction:
1. Heat the milk to 185ºF (85ºC):
Pull milk into sterilized container, then heat milk by using microwave for 2 minutes, check it, if milk didn't reach 185oF yet, keep cooking another one minutes.
The idea is to bring the temperature of the milk to just below boiling (about 185 oF). This kills any undesirable bacteria in the milk, and helps it thicken.
2. Cool the milk to 110ºF (43ºC).
After the milk be cooked, it need to cool down to about 110 oF ~ 43oC (you hands could touch it).Don't proceed until the milk is below 120ºF (49ºC), and don't allow it to go below 90ºF (32ºC); 110ºF (43ºC) is optimal.
3. Add live culture:
Spong a full Tbs of plain yogurt to the milk, stir it in the milk very well. This is a very important key for you to have good tasted yogurt. you can use a blender to evenly distribute the billions of bacteria throughout the milk.
4. Start fermentation (keep warm):
Put the container in the oven warm drawer with 110oF over 3-4 hours;
4A. or put it in oven with the light on over night, next morning you will have (Pic 2) yogurt.
4B. or you also can try to use slower cooker to keep temperature at ~ 110oF.
5. Use yogurt from this batch as the starter for the next batch.
Notes:
add 1tbs of sugar and 1/4 to 1/2 cup non-fat dry milk as option.

今年过年正好是周末。小儿子中文学校老师让学生们上课就带一份中国菜和食谱,这样的课,孩子们很感兴趣。这里就把小儿子的食谱copy在这里。
春卷食谱 袁琎越,七年级
I. 馅儿
•3瓣大蒜,切碎;
•一块拇指大小的生姜,切碎;
•2根葱,切片成火柴杆件;
•1 / 2杯切碎或切碎的白菜;
•4-6香菇,切成火柴杆件;
•1 / 2杯肉末;
•1/2杯粉丝泡软,切碎;
II.皮
•1 包春卷包装(如果冷冻解冻)
III.做法
1. 放两汤匙油,在铁锅或大煎锅超过中等高温。添加大蒜,姜,和葱。炒至香(约1分钟)。提示:炒锅加一点点水,当它变得太干,而不是更多的。
2。再加肉糜和白菜,香菇,粉丝。煸炒,加盐和酱油。翻炒1-2分钟,直到肉变熟和蔬菜变软。
包春卷
3.春卷包装放在一个干净的桌面上。拿一个汤匙。舀一勺馅儿, 放在春卷皮上。
4.先包下到上一卷。然后卷左边到右边。再卷一次。 重复把右包到左边。最后把皮卷到完成。放蛋液在皮的反面, 让皮粘在一起。
炸春卷
5. 放3勺油, 把油烧热。 再把春卷放进锅里。 一直炸到春卷变成金黄色。

厨房里的快乐 86 - 新糯米八宝饭
新年新气象!
八宝饭是江浙一带传统的一道过年节日点心。
这次用了血糯米来做。一则在新年时机增加很多喜气,二则也是更加有营养。当然最主要的是即香又Q噢!
原料:
1. 血糯米二杯,糖一杯。
2. 豆沙一杯,cranberry (曼越梅)1/2杯,核桃仁1/2杯,大红枣六只切成四片。
做法:
1. 糯米浸泡过夜,蒸三十分钟至熟。(如果用高压锅的话,不用浸泡,压25分钟即可)。
2. 不沾锅加二勺olive oil,二勺融化的butter,将蒸熟的糯米饭先用油拌匀,再加入糖,cranberry (曼越梅),核桃仁继续拌和.
3. 用一只干净的碗,抹上少许butter,先铺上一层拌好的糯米,再铺一层豆沙,最后再铺一层糯米。就可以放入冰箱。
4. 在吃以前再蒸一次或用microwave热二分钟,再反扣在一只比碗大的盆子上。(如图)。
