厨房里的快乐32-上海菜肉馄饨 (zucchinis 绿皮西葫芦版)
主料:鸡肉或猪肉糜、鲜香菇、蔬菜 (zucchini).
配料:盐、鸡精、料酒、葱姜、麻油、紫菜、虾皮、胡椒粉
制作:
1、鸡肉或猪肉剁碎成肉糜,放入香菇末、葱姜末、料酒拌匀;
2、绿皮西葫芦(zucchini)洗净, 用削cheese的刀削下小片(图1),加入盐抓揉挤出水分出水分成末;
3、绿皮西葫芦末和肉等混合,加入盐、少许糖、胡椒粉、麻油拌匀即成馅料;
4、取小馄饨皮,将馅料放在皮子中间,对折再窝合成馄饨(图2);
5、汤锅放清水烧开,放入馄饨盖锅煮沸,加入冷水再次烧开即可用漏勺捞出;
6、下馄饨的空隙,取一大碗,放入盐、麻油、紫菜、虾皮、胡椒粉、葱花,倒入半碗开水冲开,馄饨捞出后放入碗中即可(图3)。
