Happiness in the kitchen 厨房里的快乐 -144 南瓜花卷

 


用料:

白面部份:yeast 1 tsp,温水(45C左右)1/2 cup,普通面粉2杯,

南瓜面部份:yeast tsp,蒸熟的南瓜泥 3大匙,普通面粉2杯,

葱花,盐, 糖各少许;

做法:
1. 像正常发面一样,先发南瓜面:将南瓜泥揉入面粉后,加入yeast, 揉15分钟。放入一边。

2.白面加温水和yeast 揉面15分钟将面粉揉成光滑的面团团。
(可能需要根据面团干稀程度调整水和面粉用量,必要的时候往里加面粉或者水。)

3.将两份面团分别发酵1小时左右,到面团体积翻倍。

4.发酵好的面团用擀面棍排气,将南瓜面和白面各切成二份,取一份白面和一份南瓜面擀成长方形片,在白面片上撒上葱花,盐,少许油,将南瓜面片压在上面,对折三卷起来,用刀切成一段段,取一段中间用筷子挑起,两端扭成麻花。

5.整理好的花卷,静置30分钟到1小时二次发酵。

6.大火蒸8分钟,关火2分钟,取出。

材料
去皮鸡肉 一磅 (Costco chicken tenderloin),切成1.5inch左右。
腌料
盐酥胡椒粉 (见上图)2大匙,盐1大匙,酱油 1大匙,蒜末 1大匙,糖 1/4大匙
裹粉
地瓜粉 (sweater potato).1杯
做法
1. 将鸡肉切成 1.5 ch的丁块。撒上盐,十分钟后冲洗干净。
2. 将所有腌料拌入鸡块,再腌十分钟。
3. 鸡腿肉裹上地瓜粉,静置至反潮。
4. 放入气炸锅中,以375F烤8分钟后,将盐酥鸡翻一面,以375F烤5分钟到熟,即完成。

Happiness in the kitchen 厨房里的快乐 -142 韩式洋葱炒牛肉片 (Korean teriyaki beef)


Ingredients:

1 lb beef slice, 1/2 onion slice, 3 pc pepper, diced 5 pc garlic , 2tsp oil, 1 tsp wine.

Cooking:
1.marinated beef with Korean beef sauce (# marinade sauce)for 10 mins,
  or used beef from HMart pre- marinated directly.
2. add 2 tsp oil into fry pan, stir onion and peper first, then add beef, and 1tsp wine 5 mins or until all cooked.

材料:
1磅牛肉片,1/2洋葱片,3个辣椒,切成丁的5个大蒜,2茶匙油和1茶匙葡萄酒。 
烹饪: 
1.腌牛肉加韩式牛肉酱(腌料#)10分钟 或直接腌制过的HMart牛肉。
 2.在煎锅中加入2茶匙油,先将洋葱和胡椒粉搅匀,然后加入牛肉和1茶匙葡萄酒5分钟或直至全部煮熟。

# marinade sauce 腌料
1 tbsp veg oil, 1tsp 素油
1 tsp salt, 2 tsp 糖  sugar
1 tbsp 生抽酱油  soy sauce
1 tsp 蜂蜜  honey, 1 tsp sesame oil 芝麻油
1 tsp 味霖或米酒   mirin or rice wine
1/8个奇异果 或梨  1/8 kiwi minced , or pear
1 -2 蒜瓣   1-2 clove garlic, minced,

mix well all ingredients except oil, add mixture to 牛肉, marinated it over 20mins or o/n







Happiness in the kitchen 厨房里的快乐 -141 上海黄鱼雪菜面

主料:三条小黄鱼约一磅左右。

配料:皇子菇一根切片,薑一块切片,蒜四瓣,葱二根切碎,一大勺酒,二小勺盐,毛豆仁少许,小包装雪菜半袋。

做法:

1.清洗三条黄鱼擦干,再用盐里里外外擦一边,静放十分钟后,用水冲洗干净,用纸擦干。

2.用airfryer 375 F,6分钟。

3.汤锅里皇子菇,薑,盐烧10分钟,将鱼放入锅中再煮10分钟,保证鱼没有烧散。放入毛豆仁,蒜,烧开,再将鱼完整取出。

4.面条过沸水,再加冷水冲过,把面条放入鱼汤中,撒上葱花。

材料:

l.油酥材料(得油酥约240g,分割为16份)
     低筋面粉 (cake flour) 180g澄清黄油 (clarified butter)或猪油72g
2.水油皮材料 (得水油皮约360g,分割为16份)
      中筋面粉 all purpose flour 200g, 20g, 盐 5克澄清黄油,或猪油,或素油 80g, 
       温水 70g(请按情况调整水量)
3.叉烧肉:用烤箱300F,烤出来的叉烧切成小丁,拌上一点叉烧酱或者甜面酱放入冰箱中待用。
4.肉松酥:用暗红色的肉松酥,16份,每份一大勺。

做法:

1.先做水油皮:clarified butter 或猪油冻,microwave 融化成拌入allpurpose flour,再一点点加水拌匀,加5克盐,用小熊揉面机,揉I0分钟后,再醒20分钟。一定要软一点,放在室温高一点的地方,不能冷却,因为油会凝固,后面不好操作。

2.油皮是clarified butter 融化后拌入低筋面粉,用保鲜膜包裹好防止开裂。

3.将醒好的一半水油皮将包包子一样将一半的油皮包好,用擀面丈擀平,沿长边卷起来,再擀平卷起来,切成八份。另一半水油皮用相同的方式做油酥皮,全部16份酒酥皮好后要用湿巾纸盖好,防止干裂。

4.将一份油酥皮加一大勺叉烧,再加一勺肉松包好,手指粘点水封口,封口朝下放在烤盘上。

5.用375F 10分钟后,再涂上蛋黄液,再烤8分钟,最后改成400F5分钟上色。

Happiness in the kitchen 厨房里的快乐 -139 蒜末粉丝蒸鲜扇贝

 


材料:

8-10只 大鲜贝,或者6只大扇贝,1小包烟台龙口粉丝,切碎的4瓣大蒜,二小勺细盐,一小勺料酒,二大勺生抽酱油。

做法:1.先将粉丝用温水清洗十分钟,略剪断。再放入锅中加半勺酱油,一勺水煮熟。(因为鲜贝只蒸6分钟,粉丝需要先煮熟)。

2.鲜贝的处理:用水浸泡,然后洗净。先撒点盐,十分钟后再洗净,用厨房用纸吸干鲜贝水分,这一步是去腥的关键。

2* 如果是扇贝,需要先浸泡一小时去沙,然后分别用面粉和盐再搓洗干净。再用上面的鲜贝的处理。

3.蒸锅水煮开,放入一大盆子,先放上煮熟的粉丝打底,再放上处理好的鲜贝,上面撒上切碎的蒜蓉,蒸六分钟关火移锅,一分钟后开盖子,撒上一大勺酱油调味的鲜汤,和少许葱花,胡椒粉,辣椒粉即可。我又加了一点胡椒油更好去腥。

Happiness in the kitchen 厨房里的快乐 -138 蒜末粉丝蒸虾


Ingredients:

10 pc shell shrimp, 1 small page noodle, diced 5 pc garlic , 1 tsp wine,  1 tsp salt, 2 tbsp 酱油

Cooking:

1. soak rice noodle in warm water for 20 mins. then add 1 tsp 酱油 and water to cook 3 mins.
2. 10 pc shrimp cleaned up, add 1tsp salt, wait 10 mins, then put in shrimp middle with ginger & garlic, add rice noodle on bottom of shrimps on a plate.
3. add 1 tbsp soy sauce to shrimp and noodle , steam all together for 8 mins。

 Ingredients:

1 Lb noodle, 1/2 Lb sausage, 1 tsp salt, 1tsp soy sauce, few other freeze vegetables. 

Cooking:

1. Add  the noodle into boiled water, until cooked, then drain it with cold water. 
2. Stir 1/2 lb cooked meat ( sausage, chicken breast, beef siren), freeze peas, corns, etc. 
3. Then add dried noodle and slat and soy sauce into, stir all together, until see noodle becoming harder on one side. Flip to another side, ready to eat.

Ingredients:

1. 1 lb Salmon, 1 tsp salt, butter, 1/2 lemon, 

2. Japanese grilled sauce* (1 tsp salt,1 tbsp 清酒 cooking white wine, 1tsp miso sauce +1tbsp water, 1 tsp sugar,1tbsp 生抽酱油)

Cooking:

mix well add to salmon, put salmon into air fryer, 375C, 5mins on each sides. then add left Japanese grilled sauce.

Use same way to cooking chicken.

Ingredients:

1lb of Korean noodles, 1/2 lb spinach, 1/2 mung bean sprouts, shredded egg 

1 lb braised beef, 

韩式牛肉酱汁 (Korean teriyaki beef sauce:1 tsp salt, 2 tsp 糖  sugar, 1 tbsp 生抽酱油  soy sauce,         1 tsp 蜂蜜  honey, 1 tsp sesame oil, 1 tsp 味霖或米洒   mirin or rice wine, 1/8个奇异果   1/8 kiwi minced , 1 -2 蒜瓣   1-2 clove garlic, minced)

Cooking:

1. put spinach, mung bean into boiled water for 1~2 mins, and cut them into slice. make shredded 2 eggs. roast beef or teriyaki beef.

2. put noodle into boil water for 4~5 mins, then soak it in cold water, drain out

3. add all mixture with Korean teriyaki beef sauce.
